A server with a fast NIC drops packets
The obvious way to record Ethernet is a server with a fast network card and a stack of SSDs. At sustained 10 Gigabit line rate it drops packets, because the operating system and the file system decide when to pause, and a pause at line rate is lost packets. A recorder built around the rate writes the stream straight to disk with nothing in the path to stall it.
The OS pauses when it chooses
A general-purpose stack pauses to service other work, and at 10 Gigabit every pause is packets on the floor.
The write has to be continuous
Recording Ethernet for a long run needs an unbroken write, which a file system managing its own housekeeping cannot promise.
Capture software is a project of its own
